Chicken



Since we will be serving chicken in our restaurant, we experimented with a few dishes with chicken. This was made awhile back. Here we have a dish that actually looks relatively simple, but tastes a bit more complex than it seems. From the top we have yellow basmati rice. The chicken was marinated with Kinta Restaurant's "secret" spices. At the bottom of the photo is potato rendang, which was made from various curry spices, coconut milk, and fried coconut meat. To complete the plate, we added some fresh cooked broccoli.

The chicken was purchased from a Halal butcher.

"Secret" Kinta spices huh? Sounds intriguing and it looks so good! I love rendang and find it interesting that you found a way to serve it with vegetables rather than the usual beef.

don't forget coconut shavings in curry to make it thicker!!

scary on cholesterol though. however, try substituting using yogurt or just do without it. :) granny has been cooking without any form of milk for awhile.

anyway, i'm hungry! toodles!

Hi there. Couldn't help myself, I gotta write in. I think the inclusion of chicken and shrimp is going to turn off more people than it will attract.

Meat eaters don't want to go to a primarily vegetarian restaurant for it's meat offerings. And, I know that a lot of our customer base will be much less likely to support a business that supports the meat industry (http://www.chickenindustry.com/) than one that does not.

I really hope your meat dishes will be kept to a minimum (if you continue to include them at all) and that you take into account the use of separate grills, etc. when making vegan dishes.

Coconut doesn't have any cholesterol in itself (only animal-based products does, like yogurt), but I have read that consuming a large amount of it can have an effect on increasing cholesterol levels, although I'm not sure how. As with anything, I think moderation is key.

Hello there, good to hear from you here. As you may have read from my posting on your blog, our menu concept is different than a regular restaurants. In regular restaurants, meat is the main focus of a meal, and vegetables are usually relegated to the side (like a side salad). In our restaurant, we turn this concept on its head; vegetables are the main focus of our meals, whereas meat is the side (for those who want to order meat), and meat is only optional.

The chicken is grilled on a separate grill, so no vegan dishes will be made on that grill.

Our goal is to encourage people, regardless whether they're vegans, vegetarians, or non-vegetarians, to consume more vegetables and in their diet. I think this is a positive and healthy way of promoting eating habit that's not only better for our bodies but also for our environment.
